Spring Organic Greens Salad with Dragons Breath Blue Cheese and Lobster

Serves 6

Ingredients: A selection of whatever greens look good in the market.Wash thoroughly before chopping and dry in a salad spinner or with towels. For this day we used from Selwood Greens Organic Farm:

• 2 bunches tender beet greens, stems removed

• 2 bunches spring turnip greens, chopped once or twice, stems removed

• 2 bunches small green onions, chopped into 1-inch pieces

• 2 bunches baby kale, separated and stems removed

• 1 bunch spring chives, chopped

• 1 head fresh bok choy, roughly chopped in 1-inch pieces

• Several leaves of red leaf lettuce torn in bite-size pieces

• 6 slices Dragons Breath Blue Cheese (from The Dutchman’s Farm)

• 4 oz lobster meat

• Vinaigrette–see below


After greens are washed and dried, combine in a large bowl.Add the vinaigrette and toss lightly with a wooden spoon. Place on six plates and top with a slice of cheese and piece of lobster. Any remaining vinaigrette in the bowl can be poured over the cheese.

Vinaigrette: Made from

• 1 tbsp balsamic vinegar

• 1/2 tsp sugar

• salt and pepper

• 1/2 tsp fresh garlic

• 1 tsp chopped shallots

• 1/2 cup good quality extra virgin olive oil

Whisk together all ingredients except oil
then keep whisking while adding the oil
in a slow stream until incorporated
